There is something in vegetables that really repel children from eating them. In fact, when I was a kid, the only vegetables that I know are French fries so you can imagine the headache I must have caused my mother back then. Now, I can hear my mom laughing at me from heaven because my daughter’s negative affinity towards vegetables seem to be more intense than mine. If your kids do not like to eat vegetables, then we are on the same boat. Desperate, I tried to recall what my mother did to make me become more interested in eating vegetables and so I remembered her age-old recipe for tortang talong. I was so excited with the prospect of finally making my child eat vegetables but I got disappointed to find out that we didn’t have any eggplants at home. What we have in the fridge are chayote and squash. And so a great idea sprang inside my head and I ended up cooking vegetable nuggets instead.
Ingredients
1 cup shredded chayote
1 cup shredded squash
2 cups flour
1 egg
Salt and pepper to taste
A dash of All Spice condiment
Cooking oil for frying
Mix all ingredients in a mixing bowl and form the mixture into a patty. To make eating more fun, I made letters that spelled out her name.
Heat the cooking oil and deep fry the vegetable nuggets until golden brown. Pat the excess oil using a paper towel if necessary.
Serve with rice and ketchup.
