Homemade Oatmeal Cookies Made From Scratch

My sister loves to go on a diet and so she buys lots of low calorie foods but she really does not have the perseverance to sustain through her diet. And so this leaves the fridge with an assortment of diet foods like oatmeal, low-fat milk, raisins and so on. I don’t really consider them as real food but I don’t want to throw them away as well so I decided to make a simple recipe of oatmeal cookies made from some ingredients found in the fridge. You will surely love to try this recipe at home. My daughter loves them and always requests them her snack at school.

Ingredients

1 cup softened butter
1 cup white sugar
2 eggs
2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon vanilla
3 cups oats
Raisins (optional)

Procedure

Cream the sugar and butter in a mixing bowl. Beat in eggs one at a time then stir in vanilla.

Combine flour, baking soda and salt and stir into the sugar and butter mixture. Fold well then mix in oats and raisins (optional). Chill the dough for one hour.

Preheat the oven for 180 degrees Celsius. Grease or add wax paper the cookie sheets and roll the dough into balls. Arrange them at least 2 inches apart from the cookie sheet as the dough will flatten out. Bake for 8 to 10 minutes. By the way, if you don't have an oven, you can put your dough inside an oven toaster but you have to check it all the time to prevent the cookies from burning. Let the cookies cool for five minutes in the baking sheet before transferring them to the wire rack.
